Thankful, We Share a Holiday Recipe

It’s the season for gratitude, and we at Community Education count our blessings frequently, but particularly at this time of the year as we approach Thanksgiving.
We are thankful for the our interesting and diverse student body, our instructors who share their knowledge with great passion, and our staff members who strive to give our customers the best service. We’re also grateful for the opportunity to serve our community for over three decades.
In the spirit of this holiday – and as an expression of our commitment to healthy foods – I would like to share with you one of my favorite recipes that my family enjoys at this time of year.
Santa Monica College has always had a strong commitment to sustainability and it recently held “Food Day” with the goal of informing the community about healthy, affordable, sustainable, and local food options.
Keep watching for more learning opportunities as we increase our organic food-related course offerings; classes will range from “Organic Gardening” to “Organic Shopping.”
In the meantime, here is the recipe I promised. The vibrant color of butternut squash matches the colors of the season and will beckon anyone visiting a farmer’s market – if you haven’t tried butternut squash this is a good way to enjoy it.
Butternut Squash Soup
Serving: 6, Yields: 7 cups
Cook Time: 25 minutes
Total time: 1 hour 5 minutes
Ingredients:
- 1 medium (2 ¼ pounds) butternut squash
- 1 small onion, sliced
- 2 cans (14 ½ ounces each) chicken broth, divided
- 2 tablespoons butter or margarine, cut into pieces
- 1/8 teaspoon pepper
- Pinch ground nutmeg
- Sour cream (optional)
Directions:
- Cut squash in half and remove seeds. Peel and cut into cubes
- Preheat oven to 425°. Place squash and onions in casserole dish and add 1 can of broth, dot with butter and sprinkle with pepper and nutmeg. Cover dish with foil and bake until tender, about 40 minutes.
- In batches, pour cooled vegetables into blender, and blend until smooth. In saucepan, combine pureed squash and remaining broth. Bring to a boil. Serve topped with sour cream and a sprinkle of nutmeg.

Program Coordinator
Community & Contract Education
SMC Community Education is pleased to announce a robust Winter Session – with more than 60 classes, workshops and tours – and several new offerings. Online registration is now open and classes begin Jan. 6.
“We’re very excited to offer a dynamic collection of courses this winter ranging from
the arts to fitness, from languages to professional development,” said Alice Meyering, Program Coordinator of Community & Contract Education.
Meyering said the program is particularly pleased to offer a new certificated “Secrets of Public Works Projects Series,” which begins Jan. 11 with a course on “Prevailing Wages: Tips You Need Before You Bid.”
“With more than $100 billion of approved California public works projects at stake, this new series is crucial for the construction business,” Meyering said. “We want contractors to learn about complex wage regulations so they can keep on track and maintain healthy profits.”
Other new classes include “Introduction to Basic Mindfulness,” a French pronunciation class, and “Animation Creators: Stop Motion” for 8- to 13-year-olds.

Four Exciting SoCal Tours in Winter
Community Education is offering four exciting tours this winter
– three urban, one rural, two new – that will introduce you to
places you’ve never been, or reintroduce you to spots with a
whole new viewpoint. Two of them are local photo safaris.
“One of the special things about Community Education is that
it offers unique tours to places in our Southern California
backyard – and gives us insight we would never have otherwise,
” says Alice Meyering, Program Coordinator of SMC Community
& Contract Education.
Join us for adventures to lovely Cachuma Lake in Santa Barbara
County, Pasadena, Watts Towers and Heritage Square Museum

Lake Cachuma (with Nature Center & Picnic), Jan. 18, 2014 from 9 a.m. to 7 p.m.: Discover glimmering Lake Cachuma, set amid acres of wilderness and It's an area teeming with wildlife, so you may get the chance to see deer, bald eagles, hawks, and possibly even a fox. Cyb Barnstable: Teacher & Philanthropist
Cyb's former acting student.
Priscilla “Cyb” Barnstable, one of the original “Doublemint Twins,” is not
only a great teacher for her class “Commercials, Improv, Acting & Filming,”
she and her sister have raised millions of dollars for diabetes research in
their native Kentucky.
She and her identical twin Patricia have had a glamorous, adventurous and somewhat quirky career in modeling, commercials and television – not always together, but not infrequently. It’s a career she says she has loved – as much
as she enjoys teaching.
She moved to New York from Kentucky and signed on with Eileen Ford’s
Ford Modeling Agency after graduating from the University of Kentucky.
She modeled in New York and internationally, appearing in such magazines
as Cosmopolitan, Vogue, Glamour and many more.
She has appeared in many TV commercials and shows, including “The Tonight Show Starring Johnny Carson,” and, with her twin sister, went to Vietnam on a Bob Hope tour.
You bring a lot of talent and experience to your classes. Is there a particular approach or philosophy you take into the classroom?
My philosophy is to offer the class I couldn't find when I moved here from New York: perfecting one's craft, as well as breaking it down as to how to get into the entertainment business.
What do you hope your students will come away with?
Inspiration! It is critical for any aspect of the entertainment industry. I want my students to believe in themselves and to have the courage and confidence to try.
What are the rewards for you as an instructor?
Seeing students find their passion and their gratitude for taking the time to "care.”
Tell us about a student or two of yours who have gone on to success in the field.
Kellan Lutz (“Twilight,” “Nightmare on Elm Street,” and the upcoming “Hercules: The Legend Begins”) is a former student of mine and a major success story. However, the credit goes to him. He is a hard worker, very kind, and has a great positive attitude. Quite a few of my students from SMC are or have been in multiple national commercials. Commercials are lucrative, but there is no name recognition because the client wants to keep the focus on the product. I know of tons of success stories in that area.
Doing the “Doublemint Twins” commercials in the late ‘70s launched your career. What was that experience like?
Tricia and I had a phenomenal experience with the "Doublemint Twins" campaign, including location trips and lots of exciting adventures, riding horses, swimming under water, sailing in The Virgin Islands, etc. And we got to cast the guys in the ads with us!
Why are commercials – and improv skills – important for actors?
Commercials are "beginner friendly." Clients like new faces, and commercials can financially set up an actor while they pursue a film and TV career. Improv teaches one to be creative and to “listen" to the other actor.
Your Barnstable Brown Foundation has raised $12 million for diabetes research through the Gala held each Kentucky Derby eve. Tell us how you and your sister established the foundation and what it means to you.
It started off small – a little fundraiser derby eve at Tricia's home. Her husband David died of diabetes complications so the cause is dear to our hearts. We were amazed at how many national and international celebrities wanted to come, support the cause, and enjoy the Kentucky Derby weekend. It just grew into this amazing successful event. My mother helped set up the foundation at the University of Kentucky.
You and your sister starred in the quirky 1978 “Quark” NBC comedy series (available on DVD) with Richard Benjamin that developed a cult following. Tell us about your characters on the show and what it was like to be on that series.
We played clones, actually one was the clone but we didn't know which one. We were the pilots of an intergalactic garbage truck, and it was a wacky comedy created by the comedic genius, Buck Henry. “Quark” was hysterical to work on.
Are there one or two actors, alive or not, whom you particularly admire? Why?
I admire Cate Blanchett and Daniel Day Lewis. Both are brilliant and have such range. They create characters of such depth.
Your given name is Priscilla, but you go by “Cyb,” which is also your Screen Actors Guild name. How did that happen?
Most twins have their own language before they learn English. Cibbie was my name in "our" language and it just stuck. It became Cyb.
